Usage Notes Beet Juice Powder is food grade but it cannot be used in either drugs or cosmetics. This colorant is prone to degrading when it is exposed to light, heat, and oxygen. Due to Beet Juice Powder’s poor heat stability and fair lightfastness, it is ideally used in products which are designed for a short shelf life, products which are sold in a powder form, or products which are frozen. Beet Juice Powder is noted for its ability to withstand pasteurization, especially in formulas that contain high levels of sugar. Beet Juice Powder will degrade in the presence of oxygen, especially if the formula contains high water concentrations and metal cations such as iron or copper.

Formulas that use antioxidants may extend the coloring potential of Beet Juice Powder. In the dry powder state, Beet Juice Powder retains its coloring potential in the presence of oxygen.

Typical Product Uses: Soup; Ice Cream; Powdered Beverages; Confectionary Products

Effects of pH Beet Juice Powder generates a bluish-red shade if the solution is pH 4-5; the solution becomes a brighter red as the pH rises and it will ultimately generate a yellowish-brown solution if the pH becomes too alkaline.

Usage Notes Red Cabbage Powder is food grade but it cannot be used in either drugs or cosmetics. This colorant is noted for excellent heat stability and excellent lightfastness. Red Cabbage Powder has greater stability when the pH is 3.8 or lower. At higher pH levels, the colorant becomes less stable.

 

Typical Product Uses pH Indicator; Powdered Beverages; Confectionary Products

Effects of pH Red Cabbage Powder is often used as a pH indicator. It will generate a reddish-magenta solution in a pH of 3; a pinkish solution in a pH of 4-6; a purple solution in a pH of 7; a bluish-green solution in pH 8-9; a yellowish solution in pH > 9

Usage Notes Red Radish Powder is food grade but it cannot be used in either drugs or cosmetics. At pH 3 and below, Red Radish Powder is a yellowish-red shade. As the pH approaches neutral is becomes pinkish and the colorant becomes less stable. Red Radish Powder is noted for having good lightfastness and heatfastness.

Effects of pH Red Radish Powder is a yellowish-red shade in solutions of pH 3 and lower; a pinkish shade in pH 4-6

Usage Notes Water Soluble Carmine is derived from select insects.  This colorant is food grade and it can be used in ingested and externally applied drugs, and cosmetics.  This colorant is noted for having excellent heat stability and lightfasntness, and stability in a broad pH range

Effects of pH Water Soluble Carmine is often used in low pH products. It is noted for its stability in a pH range of 2-9. Water Soluble Carmine is orange in pH < 4; at pH ranges > 4 it is a bluish-red

Usage Notes Annatto Powder is water soluble and is food grade and cosmetic grade, but it is not permitted for use in drugs. Annatto Powder is noted for good heat stability and good lightfastness, but it is not recommended for pH < 3.

Effects of pH Annatto Powder will impart a yellowish-orange shade in pH 3-8. It is less stable in acidic pH ranges.

Usage Notes Beta Carotene is approved for use in foods, drugs and cosmetics. Beta Carotene is noted for excellent heat stability and lightfastness. Beta Carotene is most suited for pH 2.5-8.

Effects of pH Beta Carotene will impart an orange shade in pH 2.8-8. The shade becomes yellower as the pH rises.

Usage Notes Saffron is a water-soluble powder and it is approved for use in foods. As a color additive Saffron is derived from the stigmas of the Crocus sativus flower. Saffron is noted for its lightfastness and heat stability.

Usage Notes Turmeric Extract is a water-soluble powder and it is approved for use in foods. Turmeric is noted for its very good heat stability, fair lightfastness, and stability in a wide range of pHs. In foods, Turmeric is often used as a natural colorant in lieu of FD&C Yellow #5.

Effects of pH Turmeric Extract imparts a bright yellow shade from pH 2.5 – 8. The shade becomes more orangey as the pH rises above 8.

Usage Notes Sodium Copper Chlorophyllin is a water-soluble powder and it is approved for use in citrus-based dry beverage mixes. Sodium Copper Chlorophyllin is noted for having very good heat stability, very good lightfastness, and good stability in a range of pHs.

Effects of pH Sodium Copper Chlorophyllin will impart a green shade. It is most stable in pH 4 – 9.

Usage Notes Spirulina Extract is a water soluble powder and it is approved for use in foods. This product is noted for having a bright bluish-violet shade. This product is most stable in pH 6 -7. It has moderate heatfastness and fair lightfastness.

Usage Notes Black Carrot Powder is water soluble and it is approved for use in foods. This colorant is noted for having good heat stability, good lightfastness, and stability over a broad range of pHs but it is most stable in acidic pH ranges. This product is often used as a natural alternative to FD&C Red #40.

Usage Notes Caramel Liquid is water soluble and it is approved for use in foods, drugs and cosmetics. Caramel is noted for having excellent heat stability, excellent lightfastness, and excellent stability in acidic pHs. This product is very mild in flavor and it is typically used to impart color. This is a great colorant if you’re formulating a low pH natural cleaning product.
